Mixed Fried Rice(Chinese)
With the unusually raining season last year in Kerala, the sudden cold snap and freezing nights rudely reminds us that winter has arrived and Christmas is just over. Which also means that we need something hot and spicy items to have and its my turn to prepare some delicious food.

Ingredients
Rice – 250 gm ( Basmathi Rice preferred)Oil – 4 tbsp
Chicken – ½ cup (boiled & shredded)
Prawn – ½ cup (boiled)
Egg – 3 pieces (scrambled)
Onion – 1 piece (finely chopped)
Garlic – 1 tsp (finely chopped)
Spring onion – 2 pieces (finely chopped)

Cabbage – 100 gm (finely chopped)
Capsicum – 1 piece (chopped)
Carrot – 1 piece (chopped)
Green chillies – 4 pieces (chopped)
Soya sauce – 2 tsp
Salt – to taste
Sugar – 1 tsp
Pepper – ½ tsp
Chilli garlic sauce – 1 tsp
Capsicum – 1 piece (chopped)
Carrot – 1 piece (chopped)
Green chillies – 4 pieces (chopped)

Sugar – 1 tsp
Pepper – ½ tsp
Chilli garlic sauce – 1 tsp
Method for preparation
1. Cook the rice in a usual manner & drain the water. Keep aside.2. Heat oil in a pan.
3. Fry onion, garlic till light brown.
4. Add all vegetables, green chillies & stir fry for 3 minutes.
5. Add prawn, scrambled egg & chicken & sauté for a minute.
6. Add salt, sugar, soya sauce.
7. Add rice, pepper & ajinomoto & mix well.
8. Add spring onion. Mix & remove from heat.
9. Serve hot with chilli garlic sauce.
